When one thinks of Irish cheeses, the first thing that comes to mind is their rich cheddar. While they are not known for creating bloomy rinded cheese, we fell in love with this little pasteurized goat’s milk wonder. Gortnamona is mild and creamy with a delicate aroma of white mushroom from the white mould rind. Made with goat’s milk from a nearby herd, this silver-white cheese has a soft paste with a chalky center and creaminess developing towards the rind. Enjoy this unique Irish cheese with Sauvignon Blanc or unoaked Chardonnay.
