Dulce de Leche - Gourmet Guide

Dulce De Leche (meaning sweet of milk) is made by slowly heating milk, sugar and vanilla. The sweet mixture thickens as it is stirred, and takes on a caramel color due to caramelization of the sugar. Although it is similar in color to caramel sauce, Dulce De Leche is less sticky and has a softer, smoother flavor.

Dulce De Leche is a staple in South America, and both Argentina and Uruguay lay claim to its origin. Many stories say Dulce De Leche was created by accident when a maid was intending to makelechada, a drink made of heated milk and sugar. She left the mixture unattended and returned to find the golden colored brown jam that today we call Duche De Leche.
